This is a curation of my favorite recipes that I’ve found along the way and make often. I love eating healthy, but I don’t love spending hours in the kitchen, so everything here is quick and efficient. These are the meals I make on repeat without thinking. I also make them in big batches so I always have leftovers for the next day. They work perfectly for a busy lifestyle.
All of my recipes are whole foods based, cleansing and weight loss friendly. They’re naturally gluten free, dairy free, soy free, vegan and always filled with fresh, healing ingredients. There is absolutely no guilt eating any of these foods. Hope you enjoy!
Healing Cauli Kitchari Bowl
Kitchari is a traditional Ayurvedic dish made from rice, mung dal and gentle spices. It is soothing on digestion, easy for the body to break down and often used during cleansing. This version adds finely chopped cauliflower for extra fiber, minerals and creaminess. I like to make this when I want something nourishing and quick.
Ingredients
• ½ cup split moong dal
• ½ cup basmati rice
• 1 full head cauliflower, washed and finely chopped
• 5 cups water
• 1 tablespoon coconut oil or avocado oil
• 1 teaspoon cumin seeds
• ½ teaspoon fresh or ground ginger
• ½ teaspoon turmeric
• 1 teaspoon sea salt
• ½ teaspoon black pepper
Garnish
• Fresh cilantro
• Lime or lemon
Directions
Rinse the moong dal and rice. Soak 15 minutes, then rinse again.
Warm the oil in a pot. Add cumin until fragrant, then add ginger and turmeric.
Add the rice, dal and chopped cauliflower. Season with salt and pepper.
Add 5 cups water. Bring to a boil, then reduce to a gentle simmer.
Cook uncovered for about 30 minutes, stirring occasionally, until soft and creamy.
Adjust seasoning and serve with cilantro and lime.

Roasted Potatoes with Arugula + Garlic Tahini
Roasted Potatoes with Arugula + Garlic Tahini
This is one of my quickest, coziest bowls. Crispy air-fried potatoes over fresh arugula with a creamy garlic tahini sauce, all made with simple, healing ingredients. It’s satisfying, grounding and so easy to throw together on busy days.
Ingredients
For the potatoes:
• 5 to 6 small potatoes, chopped
• Avocado oil spray
• Sea salt
• Black pepper
• Garlic powder
• Onion powder
• (Optional) paprika, cumin, turmeric, or any spices you love
For the salad + sauce:
• 2 - 3 cups arugula
• Garlic Tahini Sauce (Medical Medium recipe)
• 2 dates
• 2 garlic cloves
• 1/4 cup tahini
• 1/2 cup water
• 1 tsp olive oil
Directions
Chop your potatoes into bite-size pieces.
Spray with avocado oil spray, then season generously with salt, pepper, garlic powder and onion powder. Add any extra spices you love.
Air fry at 400°F for 15 to 20 minutes, shaking halfway, until golden and crispy.
While the potatoes cook, make the garlic tahini sauce. Blend garlic, dates, tahini, water and olive oil until smooth and creamy.
Toss the arugula with some of the tahini sauce.
Add the hot potatoes on top and drizzle with extra sauce.
