Healing Cauli Kitchari Bowl

Kitchari is a traditional Ayurvedic dish made from rice, mung dal and gentle spices. It is soothing on digestion, easy for the body to break down and often used during cleansing. This version adds finely chopped cauliflower for extra fiber, minerals and creaminess. I like to make this when I want something nourishing and quick.

Ingredients

• ½ cup split moong dal

• ½ cup basmati rice

• 1 full head cauliflower, washed and finely chopped

• 5 cups water

• 1 tablespoon coconut oil or avocado oil

• 1 teaspoon cumin seeds

• ½ teaspoon fresh or ground ginger

• ½ teaspoon turmeric

• 1 teaspoon sea salt

• ½ teaspoon black pepper

Garnish

• Fresh cilantro

• Lime or lemon

Directions

  1. Rinse the moong dal and rice. Soak 15 minutes, then rinse again.

  2. Warm the oil in a pot. Add cumin until fragrant, then add ginger and turmeric.

  3. Add the rice, dal and chopped cauliflower. Season with salt and pepper.

  4. Add 5 cups water. Bring to a boil, then reduce to a gentle simmer.

  5. Cook uncovered for about 30 minutes, stirring occasionally, until soft and creamy.

  6. Adjust seasoning and serve with cilantro and lime.
